Started a new thread, the other thread with the sheep-squeezin' and lanolin on the privates and not-so-privates is getting kinda strange.

The Kansui and Dojo ones with super-hard carbon steel clad in damascene-like stainless look pretty sweet. I really wonder how these would compare to the German stainless ones I have.

I know what you mean. Knife making, collecting, and using, is one of those 'arts' that you can spend all your money doing, your entire lifespan learning, and come out thinking...I wonder if I did this????

I figure that if there is a thing such as infinite improvement, then whatever that "it" is "it" is an art.

But in the meantime, aint it great to look???? :D :cool:
 
You're right that some could be saved up for. I saw a nice kitchen set for a tad over $500.00, not a bad price for some decent Japanese cooking knive's.
One of these days I will surprise my sweet Barb.:)

Be careful, that could be like giving her a toaster or a blender for a wedding gift ("No honey, I didnt mean it that way" :o :o :o ), but I dont think YOU would have this problem. :p ;)
 
If I spent that kind of money for knives I'd have no money left to buy meat to cut so what's the point.
 
Dont feel bad Uncle, all I have in the kitchen to cut is a few butter knives, a CS neck knife for small stuff, and the JKM that also serves double duty at my desk.

All I know is if I ever have to handle a side of beef, I am prepared. :D
 
You betcha! I am prepared with my 22" GRS made by Sanu and sharpened by YVSA.

Those little skulls can be tough to crack and scoop out all the tiny brains. (Personally I like to suck the brains out through the eyes, but yall might be more civilized.)

I started watching the FoodTV channel on cable and got Barb to watching it.
Hey it's about one of our favorite subjects, Food!!!!
And it's better to watch than crap like the Jerry Springer Show, Jenny Jones, and the like.
Those hit too close to home as those shows remind us of some of our close relation I'm sad to say.:o ;)

Anyway Barb has started watching Iron Chef every Friday night along with Emeril Live, Food 911, Alton Brown and his show Good Eats and the like.
Barb has expressed an interest and a desire to own a few nice Japanese knife's since I've introduced her to FoodTV.:D
We have a Great cleaver of very good size with an extremely hard edge that would make short work of those charbroiled squirrel heads!!!!!!!:)
That way you could just slurp those tender little brains out with a quick curl of your tongue, if you know what I mean.:p
