Just a follow up - I visited the Coltelli Dolcimasculo store in Rome and did a tiny summary of my visit.

Highly recommended store - the tiny place holds a very wide selection of hard-to-find-in-the-US pieces from Extrema, Fox, Bastinelli, Viper, LionSteel, Pohl etc.
