Hi folks! As my collection shrinks and grows, I always find it interesting to learn what knives other people have in their collections. You can get a sense of a person's mentality, aesthetic, focus and discipline by observing what is in their collection. That's my theory, anyway :D

So: List your knives! I'll start--

CIVILIZED KNIVES:
Set of 4 gyuto type knives without bolsters from A.G.Russell, of good Japanese steel- been using these 15 years.
1 Masahiro santoku, 175, been using it about 10 years.
1 Wearever carbon French knife, 12 inch blade, from 1920s, for watermelons and small buffalo.
2 Dexter-Russell knives with 12 inch blades, (slicer and bread)
Several excellent (some expensive, some not so much) hunting knives to prepare game for eventual entry to the kitchen
1 pair Cutco shears
BARBARIAN KNIVES:
2 L.&I.J.White cleavers, 20 inch and 22 inch, for large buffalo.
INTERESTING COLLECTIBLE KNIVES:
Several antique bread knives, one pre-1850
Several antique butcher knives, some very large
Assortment of steels
UNMENTIONABLES:
The usual accumulation of fillet knives and junkers
Several knife blocks and boards
 
Haha, very nice. I am a huge fan of buffalo! Forgot to mention my carbon steel shears from Japan and other gear, but I guess that can be saved for another thread, heh! :cool:

Got any pics of those A.G. Russel gyuto style knives?
