Spyderco and Benchmade #1
Leatherman, Victorinox and Kershaw #2
I can't think of a 3rd favorite right now...

AG Russell-- not really a production house, but a design and contract house. Still, his name goes on some of my favorite knives. If you want real production, then SAK
 
SOG (Super sharp, fairly tough)
Buck (Classic knives. The Strider Bucks are fab!)
Cold Steel (Affordable, sharp and fairly tough. Nice designs, too)

Honorable Mention: Benchmade (Only have limited experience with them. Like what I've seen so far. Kinda pricey, though.)

Big Let-Down: Gerber (What the hell happened? Mark II, Mark I, Guardian... and now garbage? At least their Multi-Tools are nice.)
