Just wondering on the technique you use to sharpen or touch up your knives with the small stones from sheath pouches (like Randall for example).

Especially on larger 7" blades.

That size stone is what I most frequently use freehand. The knife is held fixed and you work the stone over the edge.

What do you mean with "free hand"?
I use them knife in a hand, stone in the other, and I pass stone on knife.
 
Alarion- what you said is what Cliff meant! He will hold the knife still and work the stone over the edge.
 
No jigs and as you are Crayola described. With small v-ground edges I wipe them with a marker at the start to ensure that I develop the right angle, with wide edges, especially convex ones I just go by feel. I just sharpened an Iltis felling axe with small (1x4") 1000 and 4000 grit waterstones in this manner last night.
