Any idea which fonts these are?

I saw in an older thread the custom shop font is Shelley. Andante to be specific.

The script on the blade could be a variation of Commercial Script, maybe a thinner version.

The "B" seems consistent.

As with knives, many fonts have "clone" versions.

In this case, since the font/s are being used for packaging, a clone script style font can save thousands (even tens of thousands) in licensing fees, while offering more flexibility in its use.

That "B" also reminds me a little of Snell Roundhand, but the rest of the lettering, especially the small caps, seem more consistent with Commercial Script, I believe.

MyFonts has a free service page called What The Font, where you can upload lettering to help identify it. However, the letters need to be as clear as possible for the most accurate result (preferably black on white).

There's also an Identifont site that might prove useful.

Finally, there are font forums where some of the regulars/elite of the font community like to hang out. They could probably name that tune in three letters.

Yeah, the first two are probably Stencil and Shelley. As you found by searching, we figured out that Shelley was used for the Custom Shop logo. I need to look into the fonts for the new "BUSSE" logo.

I thought about Shelley, but the "S" is different. If it is Shelley, according to MyFonts, it'd be the Shelley Andante version, I think. There are quite a few clones out there, so there may be one with that "S".

It's possible that a clone script font was altered/modified for branding/corporate ID purposes. Or, the more expensive (much more expensive) alternative might be that the font was designed from scratch, but that's not likely.

Btw, Classic Script & Kuenstler Script are also similar. But, again, that "S"...

About the Stencil type font, most stencil style fonts usually seem to have breaks in the lettering, I believe. So, it's possible a stencil type font was modified simply by closing the breaks. Or, a Bodoni style font/clone could be the ticket.
 
About the font used in the lettering for the third knife, "BUSSE" is set in Baskerville, but the "#13" portion is Arial.

I have been at Adobe, in Type Development, for twenty years. Although I am not Asian (my heritage is Viking), my area of specialty is CJK (Chinese, Japanese, and Korean), though my greatest area of expertise is Japanese.

BTW, I believe the Busse Combat type is Stencil Standard, but has been manipulated. That is how I've reproduced it. What I have found in most logos is that the type will be about 10% different from any font I can find that the logo holding company does not own. YMMV
 
The BUSSE typeface is Fry's Baskerville. I had to reproduce it for some Busse advertising. If it's not, it's pretty darn close.
