Looking for a custom made boning knife

I am looking to purchase a new boning knife for my chefs knife roll.
Can anyone point me in a good direction on a quality built hand made boning knife?

That is a very nice looking knife. Just curious, how thick and wide is the blade? Any flex to it or is it very stiff?
