I'm heading to Europe in a couple of months and that got me thinking that it would be nice to have a nice slipjoint. I also have a couple of family members that I would love to make one for. I am not ready to head down that path for real for some time. I was wondering if someone makes a kit that I could make a blade for or how difficult it would be to rebuild one from a commercially available knife?

Knifekits.com, USA Knifemakers, Jantz, Texas Knife Supply, etc.

Build a very simple one first. Then a few more and maybe a more advanced folder. This will teach you how they go together and help you when starting one from scratch.

When building one from scratch, an aluminum plate that is drilled to be a set-up jig is almost a necessity.

Lol. From everything I have heard slipjoints are one heck of a rabbit hole. Not even going there. I just want to have one with better steel. I thought maybe I could make a blade for one preferably a single bladed one. Is a kit easier than rebuilding one?

Starting from a kit would be a better option than trying to take one apart and reassemble.
Even with a kit trying to make a new blade it will most likely not be the same size as the spring, so you will need to surface the blade to the same thickness as the spring.
Grinding a small folder blade is also a challenge, and have some way to cut nail Knicks.
Can it be done, yes but will be an adventure.
