Looking for a hunting knife to hold its edge?

I am admittedly a novice when it comes to knives.
The only time I have use for one is for skinning caping and cutting off the meat from big game when I am lucky enough to get something.

I hate to sharpen knives and I am not good at it, takes forever and I have no patience.

I am looking for a folding hunting knife I can use for the tasks listed above that will hold its sharpness through a normal years harvest of an elk a deer and a bear without requiring re-sharpening.

Rather than do tons of research and still come out with the wrong answer I figured I would come here to the experts board and get some expert advice.

Would someone please recommend a knife or a few options I can go out and buy today that will meet my requirements?
 
To tell you the truth, I don’t know if there is a knife that will “hold its sharpness through a normal years harvest of an elk a deer and a bear”. At least not a production knife. There may be some custom knife makers capable of this, such as Bob Dozier ( www.dozierknives.com ). That’s a lot to ask of a blade.

I do have a recommendation, but it would be a convex ground fixed blade. A convex ground knife does not need sharpening like a normal knife. All you do is strop the blade on a leather strop or piece of abrasive cardboard when it begins to dull. No stone or complex sharpening system is required, as long as you don’t take a big chip out of the edge. I don’t know of any quality production folders that come with a convex grind. The convex grind was popular among outdoorsmen during the first half of the twentieth century, but has lost popularity as the number of hunters has dwindled.

Get one with a CPM steel blade.

420V holds the best edge
440V comes in a close second
S30V is very good at edge holding and tough
3V is very tough but has little corrosion resistance.

I know that you requested a folding knife, but A.G. Russel offers a great hunting knife with a 4" blade. It is called the Deer hunter, and a smaller model is also made. 3 versions are availible in D2, VG10, and AUS8. The VG10 holds a good edge and is stainless. But the D2 should hold a great edge, and is the same steel someone recomended when they sugested Bob Dozier. I hope this helps.
