Hey guys,
Currently looking for a good santoku for work. I wanna keep it under $100 but still be good quality. I grabbed a victorinox santoku (through molded handle, not wood) off of Amazon but the handle was garbage (too small, felt cheap) Would've passed if it were bigger but no way could I use that professionally. For some comparison I've been using frost by mora's 8" cooks knife with the program handle, which I love (also been using a mora companion as a utility knife)

So now I've found 3 I'm kinda going between and need some insight on.
1st is the shun sora. Proven company, know it's gonna be high quality, but I'm slightly worried about the handle and if it's worth the extra cost over the other 2

2nd, the dalstrong gladiator series santoku. Looks pretty comfortable and seems great in theory but I don't know much about the brand

3rd would be the victorinox santoku with wood handles. Worried that I'd get it and the grip would suck again though.

Thoughts?
I'm honestly mostly torn between the shun and the dalstrong

Couple of others to consider in your general price range are the Fujiwara FKM Santoku 180mm or Tojiro DP Santoku 170mm.

I've been using a Tojitro DP Santoku for about a year and am pleased with it.

I also like Tojiro, and have a number of their knives. I am partial to the 170 mm dp Gyoto.
