I have no skill at sharpening at all I've tried freehand and the best I can do is not dull it. is the edge pro apex really good enough I could get near hairpopping with little skill? Or a something else better? My biggest knife is a bk-9 smallest a SAK.

The edge pro is actually as good as they say, but it's not that easy to learn to use and get extremely sharp edges in a short period. Sure you will immediately get sharp edges but not as hair whittling or TP slicing as Ankerson's. The more you use it though, the more you will learn. For me the best thing about the edge pro is reprofiling. I find that the edge pro and the sharpmaker complement each other. Once you get your bevels to match the angles on the sharpmaker(by reprofiling on the edge pro) you can easily touch up your knives to a hair whittling sharpness in literally a few minutes.

If you don't know at minimal the basics of sharpening no system will work any better than the other for you.

Will the EP work? yep

Will you still need to learn about sharpening before that tool becomes effective? yep

Start with a a small collection of stones, pull-through devices and a Lansky. Struggle with that for a few years. Move up to an Edge Pro by way of a Sharpmaker. Then ditch the lot for a Wicked Edge.

Buy cheap, buy twice... or thrice! Just get a Wicked Edge. You will never need anything else!

(Other sharpening systems are available, your mileage may vary)

Whats the biggest knife a sharpmaker will do? it would be the easiest thing to get and use but I didn't think it would work for a knife bigger then 6 inches or at least not without some skill.

The sharpmaker works great if the knife is already sharp. If you're looking to reprofile or sharpen a very dull knife, be prepared to spend a lot of time on it. This thread might interest you. http://www.bladeforums.com/forums/showthread.php?t=765050

The issue is I have small pocket knives I don't doubt with a sharpmaker I could get them to be reasonably hair popping however I also have a couple fixed blades with the possibility to add another 10incher 1/4th inch super steel knife which would probably be rather too large for the sharpmaker or take about 3 hours. Now I could also get the worksharp for my bigger knives but I can it be trusted to sharpen a scrapyard or busse?

Just buy some stones and learn.

Its really not that hard, we've been doing it for hundreds of years before the "sharpening system" was created.
