seems like it'd go good in the pack for food, small game and fish duty... any sources?? All I can seem to find are stainless ones, as far as stainless ones go I'm leaning towards a mora version.

check out the old hickory line, i think they have a boning/filet style blade...

dont know that i have ever seen a carbon stee fillet knife, but there are carbon steel boning knives that should work for you. look at the old hickory line. seems like they only make the 6 " boning knife now, also look at the repala 4 inch fillet knife, i know hunting guides that carry this as their work knife does everything they want and sharpens easily, it is stainless but you can find one at any walmart ai dont think you will be disapointed. i started carryiing one of the folding fillet knives for just the puposes you described.

also ragnar at ragweed forge has a bunch of different fillet knives some mora and others in 3 1/2,4,6,8 inch blade lengths. i think you can find what you are looking for.

Check the makers forum. There have been some beauties there lately. One of the guys I'm sure could make you a better one than you will find elsewhere.

that reminds me; opinel makes their "slim" line that strongly resemble folding filet knives. i think they make them in all kinds of more exotic woods too...

after poking around it looks like opinel might only make their slimline in stainless...

I googled carbon steel fillet knife and got plenty of results. This one actually looks pretty good, for the money at least.
DEXTER-RUSSELL® (10351) 8'' Narrow Fillet Knife in PC-Pak, high-carbon steel

There is a maker on ebay that goes by TwoFinger knives and he makes a 1095 carbon fillet blade that looks really nice. I haven't seen it but I have seen other blades he made and they were all quite nice.

You might check Ragweed forge for what they have from Mora or some of the other makers and companies he sells.

GL Drew had a sweet lookin' fillet knife for sale a week ago (or so). I bet you could have him make one for ya. (It was hard to pass it up.)

Start at the top with a Dozier :D

These two Murphy Knives are both carbon steel and thin, thin, thin.

The smaller one is a great general purpose knife.
They were around $20 each IIRC.
You'll have to make your own sheaths though.

Yah, custom is the way to go if you want carbon filet.

The real question here is- do you want a filet or a bird and trout style knife? When I think of a dedicated filet, I'm thinking of a distal taper along 4 to 7 inches of blade from 1/8 or 3/32 alllll the way down to nothin at the tip. Great for what it's for- But I think of the bird and trout as a more all around outdoors food knife.

Some great knives boys.... and great suggestions...

Koyote... Good point... I guess a bird and trout style would be a better gen purpose knife

Striped Bass stuffed with Blue Crab meat...both from the Chesapeake Bay, my oh my! Book title brings hunger-pangs. :D

Warning on the folding fillet knives- my version closes where the blade will hit the back spacer inside the handle. Since the edge is really thin and the steel is nothing special, this dulls the first 1.5" of the blade after closing it a few times. That's the most needed spot on a fillet knife too....

I pack an old style fixed Rapala knife that has been working well. Considering a Mora though.

Have a look at Roselli's carpenter's knife... not a fillet blade (precisely) but it will do that and a whole lot more.

Cold Steel do, or used to do, a carbon steel filet knife in 3 sizes. I have the largest, 9" blade and it's done sterling work for about 5 years. Cold Steel have an iffy rep. but this is one of their many 'good' ones.

I think in the knifemakers gallery there is a photo of two fillet knives. Don't remember the psecs but you could pm the owner and get the maker's name and inquire further.

Aren't Rapala's carbon steel? and the little one has about a 4" blade. I use one in the kitchen for a paring knife. Pat
