Looking for a specific Endura 4

Ive been carrying an Endura 4 for the past 4 or 5 years, and I love it. Super thin and light, quick to open, and it unfolds to a nice sized blade.

Ive lost it a few times, and always end up getting the same thing. I just cant beat it. I have the black version with the black partially serrated blade. I work in a bar, and its not uncommon for me to have to pull it out at a moments notice to cut up some lemons or limes if we run out.

Now Ive always been a knife guy, but in the past few months, Ive REALLY become a knife guy and stepped up my sharpening equipment. The main reason I always got the partially serrated blade was because, while I knew how to sharpen a blade, I never really knew how to get them scary sharp. Now that ive got some good stones and a leather strop, I want to switch to a plain edge.

Heres the problem. I cant find a plain edge in ALL black (blade and handle). I need the coated blade because, like I said, I cut a good amount of citrus with it, and sometimes it will get folded back up and put in my pocket with just a quick wipe from a dirty bar towel thats probably already got lime juice all over it.

I guess the handle doesn't have to be black, as I could just switch them off of the one I currently have, but black would be a plus. Ive also tossed around the idea of making my own handles for it since Ive started messing around in knife making.
 
I don't think there's a current Endura 4 model with an all nlack plain edge blade, but what I'd do would be to get a black handled Endura 4 with the satin finish blade, and then duracoat the blade.

I was considering that too. Also thinking about a Military model. The blade is only about half an inch longer IIRC, which would honestly be a good thing for what I use it for. Its more expensive, but Ive got a few amazon gift cards from Christmas. lol
 
Take a look at the pacific salt in black on black - very similar to the endura, might suit your needs...

I'm sure VG10 will patina with the citrus, but I think it will hold up quite well overall. I honestly wouldn't worry about it, but I don't like coated blades myself.

As benzology mentioned, the Pacific Salt is available with a black blade, however, being that it's H1 steel, it won't rust anyhow. IMO, there's no reason to get a coated blade unless you're trying to hide it or just like the look.

Honestly, I like the all black look. Plus Id prefer to not catch customers attention with a big shiny blade I just pulled out of my pocket. Never heard of H1 steel. Whats the lowdown on that? My go to resource for when Im picking a steel to make a knife doesn't even have it listed.

Id like it to have good edge retention, because as much as I hate it, sometimes I have to cut on the bar surface, which is tile or concrete, depending where Im working Im still mindful not to let the edge slam into the bar, but it makes contact.

EDIT: I don't know how I feel about the slightly rounded tip on the Pacific Salt. If you've ever cut a spiral lemon or lime twist by hand you'd understand. I pretty much use it like an exacto knife on occasion.

The knife also gets dipped in sanitizer pretty regularly. And I wash it before every shift, and afterwards, if Ive used it.

VG-10 is stainless, it will not patina and I highly doubt it would rust from cutting lemons. Pick your favorite handle color and hit buy!!!

A coated stainless blade is best used in tactical lemon cutting.
 
Try the all black paramilitary or military, endura is an incredible knife but the para and Millie are the next level. The satin ffg endura is an awesome cutter, especially if your used to the saber grind. It's pretty stainless, I don't think you'll hurt it with lemons.
 
In PE black blade you have a few options...PM2, Millie, Salt, Manix 2 and Manix 2 XL, and PPT. That is all I am aware of.
 
Citrus will not do anything to VG10.

But all folding knives lock work will gum up from the dried citrus with crud.
 
A black Tenacious is my suggestion. The edge length is about the same as Endura. It's also FFG, a better slicer than E4 Sabre (I assume yours is Sabre).

8Cr is a good steel to start learning about sharpening. i found VG10 is a bit tougher to get it to my liking.

If you want to stay with Endura black combo edge, get a sharpmaker. It'll sharpen the serration easily.
Surfingringo and Evil D have several posts/threads discussing sharpmaker used for serration.
 
It honestly sounds like the Military is the knife you want. I do not not use coated blades and have swum in the ocean with my VG-10 knives with no issues. But, otherwise, get the Millie.

Totally agree. VG-10 will be fine with lemon cutting. And even if it does develop spots or patina ..... well, some folks call that character.

Good point. Get a flat-ground knife.

Yep. Sharpening serrations is a breeze ...... with the Sharpmaker.
