Im really new to this and im looking for a handmade chef's knife. I've seen one that really caught my eye made by Thomas Haslinger,

I love the look of it, but does anyone have one and could share their experience using it? I really enjoy using Santoku styled knives, and this one peeked my interest. I've been using Henkels mainly, and I love em, but they are a bit weighty and would like something a bit lighter and balanced. So please if anyone has comments or suggestions for other chef knives I would appreciate it. Thanks.

Look at Butcherblock (Butch Harner's) knives here at BF. Great work and a super guy to deal with. I have one of his blades, and it's great. He also makes his own micarta and does his own sheaths. Top notch work. Bill

have you tried Japanese knives - Shinichi Watanabe, Shosui Takeda to name a few...? they are scary sharp!!!!
