Looking for forged kitchen knife

I don't know why but for some reason I feel that I need to acquire a forged kitchen knife. (Why forged? I don't know). Perhaps somewhere in the 8" - 9" range with an upswept profile. I seem to envision myself slicing watermelon and large fish filets with the knife--weird, huh. I'd like it to be unlike the typical German chef knives and more like a specially made Japanese blade with "soul." Will this remain a dream knife of mine or is there a possibility to make it come true? Any suggestions? Thanks.

Murry Carter is the man you are looking for! His Japanese style forged kitchen knives are unbelievable performers. I'm not sure if he has a website or not, but he is in the ABS. Good luck!

I don't know how oriental he can go but , Bill Buxton here on the forum can forge you a fine kitchen knife . He mostly uses 52100 or 5160 . Drop him an e-mail , he also has a website . Just look him up on the member list and go to his site . Good luck .

Murray Carter can be a bit tough to find but, he is worth the effort. He makes a darn good knife using traditional methods at a reasonable pricepoint.

If you find the Canadian living in Japan, you've got the man that will make your dream come true.

I have several of Murray's hand forged kitchen knives (Japanese style utility knife, vegetable cleaver, and long sushi slicer). They are incredible---his description of them as "insanely sharp" is right on the money. Even his Muteki line of cold forged, western handled knives is amazing. All are laminated steel. Mine have Hitachi "white" steel for the edge and either high carbon or stainless for the outer layers (depending upon the knife).
 
Protodoc, I made a quick search under Google and found Buxton's website and some Murray Carter knives for sale at BladeArt. Both makers create very nice and interesting knives. I'll continue searching further on what's available from these two and let you know what I find by email unless others here are also interested.

You will probably want to contact Murray Carter directly and get his catalog. You will find that there is a distinction between the "Muteki" line carried by custom knife vendors and his forged models.
