Looking for possible option for a folding knife

Hello,
Generally, I prefer simple, non flashy style and mundane stuff, usually under 50 CAD. Therefore most of mine are bland traditional like style, mid range steel, cheaper handle material (nylon, synthetic, FRN) variants if possible.

So it is my anniversary soon, I decided to get a grail knife for myself. I want something more fancy, classic or modern gentlemen, having have a premium steel blade and fancy handle. I can carry it to voyage everywhere, therefore locking or one hand opening are not preferable and the blade is needed to be about 7.5mm to accommodate with most country laws, I prefer slip joint over friction folder. No SAK, I have a few already for this exact role. Small pocket knife so stainless is preferred. Even for my grail, I try to not get not too expensive, like around 100$ range, crazy, but there are a few. I try to avoid China made for this one (even if they are made for big brand like Boker Plus line or Fox's BlackFox). Very specific, I acknowledge that.

Currently, I found the Fox Livri or Libar, made in Italy with M390 blade for 110$. They are the sole to fit the criteria nicely.
Cold Steel Lucky, S35VN, carbon fiber handle, 2 blades with a full serrated, which I like. Also made in Italy, which surprised me for a brand like Cold Steel.
If I shave a few criteria:
Civivi Appalachian is a very nice one, S35VN.
Boker Plus Celos Titanium is a nice option, N690 is not premium, but still a great stainless. Though I wonder if the price come from the titanium handle more than the blade itself compare to the 440C G10 version.

Due to how specific it is, my knowledge is very limited. I wonder if there are other options alike out there.

I had the fox livri and I enjoyed it but the pivot pin would rotate out of position and would cause it to not align with the contoured handles. Also the closing was a little weak and I had to make sure it closed all the way.

I typically prefer modern knives so I'll leave the recommendations to others but just wanted to give that bit of feedback.

I collect knives because with mind set of "what people of that country could go buy at a shop, buy inexpensive local made and use it for the rest of their knife without thinking twice".

My main main use and beater is ironically modern knives, thumb stubs open, etc. Better steel means harder beater. Much more convenience, fun, still inexpensive, I see it as a modern take from the same view as the traditional. Though I cannot voyage out of Canada with it.
 
Take a look at the various CollectorKnives exclusive models - mostly Lionsteel, also a few Viper and Fox. Modern slipjoints, M390 blades, maybe a little above your price range but unless you're looking at damascus models still mostly around ~US $120-170. Blades are under 3" which I think is pretty close to 7.5 cm. Mixed availability on handle materials but generally carbon fiber, titanium, micarta, stag, or wood on a few models.

I'm usually a modern folder guy, one hand open and locking. But I picked up a slim carbon fiber Shuffler (lionsteel; single clip point blade) a year ago and have enjoyed it so much that I recently added a slim titanium Roundhead (lionsteel; single spear point blade) and carbon fiber Swayback (Viper; single wharncliffe blade). I really like all three.

Nevertheless, most eye catching models for me are either sold out or exclusively in D2 (great steel though).
