I have been using the search engine and can't find the thread I was looking for. The one I was trying to find had orginal dimensions of a classic knife and a more modern take with a slightly higher heel. If I remember right there was either a file or a grid that could be copied. It was in the last 6 months and I was hoping someone would remember it or the guy who posted it could direct me to it.Sabatier is both a knife type and a knife brand. While the shape is somewhat the same, size and dimensions vary.
The term was coined to separate the higher quality knives made in the Thiers France region from the cheap mass produced knives being made elsewhere and imported in the late 1800's. Several companies use the term/name. Basically, it is a chef's blade shape with integral guard or bolster. Size varies from parring knife to 12" chef's size. Probably the size most folks call a Sabatier is the 8" to 10" blade.
It is roughly the same as putting Sheffield on an English made knife, or Yasuki/Yasigi on a Japanese knife, to imply high quality steel.

You can buy the style and size u like on ebay. The first pic Stacy showed is mine of when I purchased several blanks to practice on.
Are you thinking of Nogent knives? They are more triangular, with hidden tang handles. (Also the blades are less thick than Sabatier discussed so far.Thanks. I'm just looking for a specific thread. If I recall it was the more triangular style.
