Looking for stone recommendation for tsprof blitz 360

Hello,

I'm looking for some stone recommendations for my freshly acquired blitz 360.
I'm usualy sharpening rwl, vg10 and 14C28N kitchen knives.
The Blitz360 fits EP sized stones.
The brands I was eyeballing are either shapton or naniwa chosera, with the grits of 1000 and 5000 and maybe a 12000
For lower grit stones should I go diamond? Would a 250 ep matrix diamond be enough or do I need more grits?
How are venevs compared to ep matrix?
Which grits should I get?

The venevs are fantastic. Have not tried the EP matrix stones. I hear they are really good. The metallic-bonded CBN stones that Gritomatic sells are also really great, but I'm not sure I can make a convincing case for them, given the cost premium over the venevs.

It's pretty easy to tear up an edge on a really low grit stone on a guided sharpener, and guided sharpeners allow you to use pressure beyond what many would do when hand-sharpening. So I'd be inclined to say that the bottom end should be 400 grit. And polishing has a limit on these as well. I know we have a member here who was using 15K, and even 30K, with reservations, but 4K would make a reasonable top end, I'd think.

There's a lot of subjectivity in that, though, and when giving advice, one leans toward the practical, not the "fun to play with."

I've only used diamond and CBN on guided sharpeners, out of a probably-false hope that I would not need to compensate for stone thickness with those, at least for a while. For hand-sharpening, I love Shapton Glass, and have a lot of respect for, but not full knowledge of, my recently acquired Naniwa Pros (new name for Chosera).
 
For my TSProf K03, I have Shapton Glass 220 & 500, Naniwa Chosera 800 & 3000, and Edge Pro Diamond Matrix 650 and 2300.

They are all great... No issues mixing grit patterns.
Shapton Glass cut EXTREMELY fast. shockingly. See the above post.
The Chosera 800 is a wonderful stone.
The diamond matrix are just boringly effective.

The edge pro 250 is about 80 microns, (if I'm reading the chart right), and the shapton or naniwa chosera 1000 are in the 12 to 15 micron range.
That is about double the jump usually recommended for grit progression. You can make it work, but if your going after a shiny edge, you will probably get there faster, if you add the 650 grit stone.

I use CKTG's diamond plates in 140 400 and 1000 grit. If I want to polish the edge, then I follow that with and edge pro 1000 or 1200 grit aluminum oxide stone. Depending if I'm at work or at home. I have the 1000 grit stone at work the 1200 at home. And then a strop. Note that the manufacturers of the diamond stones, and the aluminum oxide stones use different grit scales. The diamond 1000 stone is about 15 microns the aluminum oxide 1000 grit stone is about 4.5 microns.

I got an offer for a whole set, don't know if it's worth getting doe since it seems to be rather expensive and they're used stones..

I initially went with the Venev double sided stones. I had problems with them staying in the stone holder. I then went with the diamond matrix stones. I'm very happy with these stones and to me are very easy to get good results. I'm sure the single sided venev stones would have given good results as well, however, I find the matrix stones give a better polish easier vs venev is my experience.
 
Gritomatic has a ton of stones sortable for TSPROF. Keep in mind that if you buy different thickness stones you need to adjust for that when you change the stones. The Chosera leave a weird black line behind the edge.
Do you want to mirror polish or do a toothy edge? I have luck using a strong water blaster from Home Depot or Lowes to blast the slurry off the stone and blade.
