Looking for suggestions, new knife.

I perfer the size of the Gerber Easy-outs (about 3.5" blade and 5" overall) found here:

But I am not impressed with the blade quality (400 series). I am looking for a similar knife, with easy-out clip, that has a higher quality blade. Blade brittleness is not that important as I always carry a Leatherman and never use my knife for prying. I prefer glass filled nylon handles and must not be serrated.

What budget do you intend to spend? You definitely want a lockback, or are you open to other locks?
 
It sounds like you need a Spyderco Delica (3" blade) or Endura (4" blade). They offer similar features but at a much higher level of overall quality (including VG-10 blade steel). You should be able to get either for just over $40.

The Benchmade 806D2 bears an overall resemblance to the EZ-Out in shape but in every other way is a 100% better knife.

I second that, Delica and Endura are nice folders. Salsa is not bad either, but the blade is a bit under 3" so it might not fit your needs.

The Ka-Bar Dozier folding knives for around $20 are hard to beat in my opinion. You aren't going to find much of a better deal than that anywhere else you look. For what you want to spend you could get one in every blade shape offered.
