I want to bone out turkeys and trim brisket. Right now I use a Oneida paring knife and a cheap Asian-style chef's knife. I'm happy with both, but would upgrade if there was something out there that was so amazing that I would trim the fat twice as fast. Is that a reasonable request? Would a new knife do that for me?
