Looking for the ultimate dogwood kitchen knife

I work in a meat department in a high end grocery store , cutting chicken ,beef and fish. It hard to find a knife that will fillet a fish and also brake down a tenderloin. I was lookin at Dan's fillet knives and huntsman model , I think the huntsman might be a great fit in 3/32s. If anyone has one or has any input , it would be much appreciated.
 
Hey Killer,
I have a huntsman in o1 that is just a hair thiner than 3/32 and I love it. I have not used it on any fish and not a complete butcher like you would but it has worked great in the kitchen processing everything from meat to tomatoes. I think it might be a great choice for you.
