Love Shiny Edges

I have a WE and love putting a nice shiny sharp edge on my knives.

If coarse / toothy lasts longer so be it . I'll sharpen more often .

Only way i roll every knife i use has a polished edge

Long ago, many people here said they preferred toothy edges and that polished edges don't perform as well. Im beginning to think most just never polished the apex properly.
I've always known a polished edge performs better in majority of situations. I've yet to use a toothy blade outperform any of my very shiny polished edges in everyday tasks.
Most of my knives are polished to 8000 grit, and ive never been disappointed in my edges.
I've been high grit polishing for almost 3 decades now, being a sushi chef.
