What kind of steel material do you think is the hardest to sharpen?

Which one holds the edge better?

The hardest bladesteel that I have had to sharpen to date is CPM S60V (old name: CPM440V). I is a bear !!!!! But, it will hold an edge for a long, long time.

thanks bob,

from what i've heard, CPM S90V is even harder to sharpen.

but among the three, M2, VG-10 and S30V, from your experience, which one is the hardest to sharpen?

S30V is not that bad. I touched it up on an 8000 grit Japanese water stone and it only took a few passes to make them even sharper than factory. That was a Sebenza, and a David Mosier Instigator 2. Both S30V. I haven't had to grind out nicks in them yet though.

I think M2 is the hardest to sharpen. Then S30V. VG-10 seems to be the easiest to sharpen of the three.

VG-10 is actually quite easy to sharpen, and takes a killer edge. That's why I like that steel a lot. Never used S30V or M2, but from what I've read on these forums, M2 is probably harder to sharpen than S30V, especially if its hardened higher. I think it can be hardened to around 62 HRC, right? S60V (CPM 440V) is also pretty hard.
