I am seeing knives being sold as WWII and Made in Japan or Japan written in English. Or Germany in English. I find it hard to believe that the knives country of origin would be written in English when we were at war with those countries. I can't find any info online as to when for example Japan would write JAPAN on their military items. Thoughts anyone? Thanks!

You are absolutely right. I am not aware of any Pre-1945 Japanese military items with "Japan" in English. Actually not even in Japanese since they weren't export products.
The only writings I've seen relate to the source Armory and/or dates.
Similarly, alleged pre-1945 German military items stating "Germany" in English raise a red flag.
