I'm wonder if a convexed blade, if done at a shallow enough angle and with an edge that's close to the 30' or 40' of the Sharpmaker, will be able to be touched up using the flat ceramics? Eventually I realize it'll flatten the edge, although that'll take a long time, but I'm more concerned with touch ups.

Yeah, its much easier to just use some 1000 or 2000 paper and a strop, takes the same amount of time.

i do just the same thing with my lansky turnbox
works great but after doing it 5 times i take my time to go true the grits (600-12000)
takes a lot of bringing back the convex edge and after that i put another microbevel on it (40° 1 stroke a side with the fine sticks) and after that use some chrome polish (works great for me

touch ups are great but if you wanna keep the convex edge you need to take your time getting rid of the flats again
