I'm wonder if a convexed blade, if done at a shallow enough angle and with an edge that's close to the 30' or 40' of the Sharpmaker, will be able to be touched up using the flat ceramics? Eventually I realize it'll flatten the edge, although that'll take a long time, but I'm more concerned with touch ups.

It would work but would cause more work for you later.

it works fine.

It creates a small microbevel provided the angles are right.

It wont maintain the convexness, but it will get it sharp.

i do just the same thing with my lansky turnbox
works great but after doing it 5 times i take my time to go true the grits (600-12000)
takes a lot of bringing back the convex edge and after that i put another microbevel on it (40° 1 stroke a side with the fine sticks) and after that use some chrome polish (works great for me :D)

touch ups are great but if you wanna keep the convex edge you need to take your time getting rid of the flats again:p
