I recently purchased a few Kershaw KaiEdge kitchen knives from a member here on the forum.
I received 5 knives, but was only interested in two.
One was a thick bladed upswept skinner, and the other is a 6" Fillet knife.
These came with the old style cheap wood handles, and are made in Japan.
But, they have good hi carbon steel blades.

So, I decided to rescale them with some nice wood scales I have here.
The skinner got a nice set of Eucalyptus that has a 3D Fruitcake look. Spice cake crumbs, candied fruit, nuts and raisins. Been saving them.
The fillet knife is going to get a set of cross cut African Orange Padauk.
So, I pulled the wood off the skinner, and was not especially pleased with the tang shape. I was hoping for a bit wider tang, but, oh well.

Eh, I guess I can work with it.
The knife needed finger choils to keep the fingers off the RAZOR sharp edge. And I cut in a sharpening choil to help with sharpening the edge. Didn't feel like I was losing much with this blade shape.
So ground in the choils and shaped the wood.

Glued on the scales and used Copper pins to attach, then rough shaped the scales..

Then final shaped and detailed the scales.

Then applied 5 coats of tung oil and buffed out.

The whole house still smells of the Eucalyptus, wonderful!

The handle looks strange, but it actually works as it really fits the hand! I am surprised.
I thought I had a sheath for a Nessmuk, but when I searched for it, I remembered I had let it go with another knife a few years ago. So I ordered a canted cross draw instead. Will post when I get it.
I will also add the fillet knife to this thread this week. I did have a sheath for it, several, in fact.
Hope you like it!

I would bet that that does indeed feel good in the hand. A little odd looking, but I actually like it a lot.

That wood is gorgeous too.
