making non-metallic knives

I've seen some people make knives from G10 and different plastic, and theres Cold Steel's Nightshade series. i think the idea of making knives like that sounds interesting, but other then them being light weight, and some of them not setting off metal detectors, is there really a point in buying or making them, cause i think it would be fun to make a few as a random weekend project, but i dont want to if theres no point.
 
I have some. No rust to worry about and they do cut rather well.
Make some.
 
I have a G10 fixed blade branded "Colt" that is sold and marketed as a lightweight backpack/emergency knife. The concept is interesting. But the end result falls a little short of expectations. Out of the box it was dull as a rock. I have done a little work with it on a strop, but not spent much time as I really don't have any faith in it. In terms of something to cut cake, or spread butter, it is definitely functional, and fills the marketing term of "lightweight". But as a backpack knife and what I would expect out of it, ....eh, not really there. I would feel better calling it a "safety" knife, because it would be almost impossible to cut myself with it. ;)
 
Mad Dog also made ceramic knives that have an edge hardness of 92. Totally ceramic blade - harder than steel, superior edge retention, zero magnetic footprint.

I used one (Mirage X Hunter) as a dive knife in the Red Sea and the Persian Gulf, both of which have a very high salinity. No rust problems,
