Im not well versed wit knife steels having worked only with AEBL which Ive learned is a martanistic steel. I wondered if there is a list anywhere as to what stainless steels are martanistic vs austanistic. Please excuse bad spelling.

I don't have a list, but I can give you the spelling.

Martensitic
Austenitic

And AEB-L is awesome.

I think essentially all knife steels are martensitic. H1 is an exception I can think of, still martensite involved due to work hardening but not a martensitic steel.

I believe all the 300 series stainless steels are austenitic. Or maybe just the 31x steels. I should honestly look it up myself. There may be exceptions also. I'm just going from memory here.

Edit: ok 200 and 300 series.

Easy to tell them apart - You lick them. - The martensitic stainless steels taste salty. Austenitic stainless tastes sour.

I was working with some satanistic steel today- took Stacy's advice and licked it. Tasted like sulphur

Stacy, I tried licking one, but it tasted like chocolate frosting.
Thanks much guys for your replys, I just wondered if there was a list as I was just curious. The info given was very helpful and I will check further with Alpha. I did not find a list last time, but could look at each individual stainless to see,.
Best wishes to all.
