Edit - Decided to get a much reduced Master Hunter in VG-1 steel, seeing as it's on offer and I had a $50 gift card.

Either would be nice. Both have advantages. I would personally choose the 3V for my uses.

Edit: actually read your post. Sorry. The San Mai will be nice. Try to protect the edge since the new cold Steel no longer has a real warranty.

The Master Hunter is one of the few CS knives in 3V where a hollow ground blade design wasn't changed to a horribly steep flat grind for the 3V version. That's because it was already flat. But full flat, so it will still cut well. For that reason the 3V was probably better since the steel is way tougher and holds its edge way longer. But the San Mai is still nice and being polished looks better to me. Its got the same handle design as the SRK and Recon Tanto, which I love.

Grab whichever MH you like. With Cold Steel Inc. having been sold there's no telling which models will continue to be sold. Or with what steels even if they are.
