Meatcutters Butchers How do you sharpen

I've talked with a couple of acquaintances who worked in Alaska at the canning factories. They told me they had 2 buckets-one with sharp knives, one with dull knives. Ever so often someone would pick up the dull knives and bring some sharp knives. The dull knives went to the electric grinder. Zip, zip a sharp knife. On a small commercial fishing boat - the same thing. Electric sharpener, zip, zip sharp knife. When they got to warn to be useful, some made back to shore, others were lost at sea.
