So my new knife was obviously sharp when I got it, but it seemed like the middle wasn't as sharp as the rest of the edge. I picked up a Smith's Diamond Combination Stone, and after trying it, the knife is now duller. Could it be that I'm not sharpening at the correct angle?

Hi,
How many passes did you do per side?
What angle were you using?
Did you raise a burr or were you sharpening by reflection? Or neither?
Did you try matching edge angle with sharpie/marker?
Any idea on the angle, 20 or higher? 15 or lower?

Lots of new knives come with uneven edge bevels
it might take 300++ passes per side with a coarse stone to even them out
Sharpening should take under 300 passes per side:) under 10-30 pps if angle is high (20-25) and an edge exists as you're microbeveling

Could it be that I'm not sharpening at the correct angle?
Most probably.

Use a Sharpie to blacken the edge bevel to show if you've got the correct angle.

Alcohol will remove the marker ink as well.
