Nice looking knives so I thought I'd ask.

Hi Jason,

The blade steel used on most Mu knives is AUS6 which has a carbon content of approx. .6 and chromium of approx. 13.5. The bread knife is made from 420J2 which is a lower carbon steel. The Damascus look Chef's and Santoku are made from AUS8 (.75 carbon), sandwiched between layers of 410 and 430.

Thank you Ethan. I like AUS 6 and AUS 8, but I am curious why 420J@ would be used for the bread knife? For home users like me, a bread knife is the most difficult to resharpen. Wouldn't it make sense to the company to get the longest lasting edge on their bread knives...using AUS 8 for instance? Dan
