I've just bought a Mexeur Sabatier 12" Chef's knife.
I was wondering if anyone has any information or experience of the Mexeur brand of Sabatier? On the plastic case that came with it, it called it "The true Sabatier from France" I bought it new at a small kitchen supply shop. I've heard of many of the Sabatier brands like Elephant, Lion, Stellar but not this one. The Mexeur trade mark is an umbrella.
It looks a very high quality knife. I loved the feel of it, it has a huge handle with plastic scales. A Forged blade of course, but the size of it! WOW! It's like a machete :-) I went for a carbon blade for sharpness, but it's a shame it's going to tarnish because it looks real pretty right now.
When I picked it up in the shop it didn't seem too large, but when I got it home.....Well I think I need a bigger kitchen :-)

I was using another Sabatier before I bought this one. Again it's a brand I've not seen around. It's a "V" Sabatier 10" Chef's knife, it's not forged just a stamping but it has an aluminium bolster to make it look like it's forged. It's stainless, but it worked pretty well, and I was pleased with it until I saw my new one.

I think I'm going to get some more Sabatier carbon knives.
