Lately, I have been carrying both the Spyderco Military PE and my newly acquired Benchmade 710HS. I have read the Military vs. 710 accounts on the forums and gave both of mine a tryout in the kitchen. Nothing better than using your EDC for simple household chores like cooking for Christmas dinner.

I had some chicken gizzards to cut up for dressing and I don’t like the tough membrane inbetween the gizzard halves. I used both knives in turn trying to decide if either had an advantage over the other. Both were sharpened on the Sharpmaker prior to use. Each cut easily through that tough membrane without a problem. After four packets of gizzards, it was off to cutting up the green onions and bell pepper. That is after washing both blades and the cutting board. Again both worked equally well. The only problem encountered was a longer blade would make dicing a bundle of vegetables easier but nothing to really complain about.

Next I was off to cutting up some taters for french fries. The potatoes were small in size making it easier to slice. Large white potatoes would have been a little more difficult.

Can’t wait till tomorrow to see what these two will get to cut on. Not that big a test but something to show that either knife would be very handy while camping or if you wind up in a rental cabin somewhere and they don’t have a sharp kitchen knife.

Both knives felt equally comfortable in hand while doing kitchen chores. On one of the forums someone suggested getting the 710HS if you don’t have a HS knife in your collection. I really like this blade. It does get sharp very fast when compared to the Military.
