Modifying G-10 Fiberglass Handles

If you have little experience with shop tools I would not recommend trying this. If you dry sand or grind G10, you will need a quality respirator specifically designed for fiberglass and to work in a well ventilated area. The knife in the link you posted appears to be a little more than ground down G10, it looks like the lock was slightly modified as well. That would require the attention of a knifemaker skilled in folding knives. There are a many on the forums capable of doing this. The first one that comes to mind is STR.
 
I've reworked the finger choil of a few Ontario's. Micarta or G-10 can be sanded. 100 grit cuts pretty well, wrap some around a wooden dowl, size is up to your needs. You can use the curve of the dowl to sand/reshape as you need.
Wear a respiratior, or do it outside with something to breath through. However, don't breath in the dust!
