let me know if you prefer number 1 or number 2.....

I like the look of two but would love a knife with the first blade, too bad there really aren't any that Ive seen, especially in a good steel.

Both are pretty mean looking. I'd suggest #2 because #1 would be difficult and/or tedious to do without ruining the heat treat (don't know your experience/skill level)

it's being done professionally, and my guy uses a liquid cooled machine to keep the blade cool while modifying it, so the heat treatment should be fine...

I vote number one so I can work on it! 😉

I like #1.
That said - you will end up with a pretty thick blade/wide at the shoulders since you are going higher up on a FFG. Possibly a poor slicer. Be prepared for a regrind, or at least an extended reprofile...
And that will affect the black finish

Yeah, Josh and I will work out all the details, it'll be up to him about the finish and the regrind...if it's cheaper to sandblast off the cerakote, then reshape and regrind the blade, then the blade will be a natural color when I get it back...depending on cost, maybe an acid stone wash finish?
