I have Mora companion in carbon steel and like the knife, but it rusts when not dry and when used in wet environment.I also like 12c27 steel and how it performs and was thinking getting the same knife in 12c27.Which steel performs better, besides the rust thing?

The stainless is a tougher blade and will usually hold an edge better. I believe I have gotten the carbon blade sharper - so except for shaving, the 12c27. That is why they can charge a buck more for it.

Hi,
What does "performs better" mean to you?

Geometry (edge angle and thickness) and grit finish make more of a difference in performance than steel type

For some ideas see optimum knife edge angles and what they should be able to do/slice/chop

And cliffstamp/reviews/mora_2000.html / blade_testing.html#carpet_2 which says the mora stainless version has a significant advantage compared to the carbon steel Mora due to the higher hardness and wear resisance.

The 12c holds a edge better IME. I have many moras. I typically grab the stainless models. Good stuff

While I'm not a Mora (or any similar blade geometry) fan, 12C27 is one of my all time favorite steels.

Ill get the stainless one!12c27 performs like carbon steel and I love it on some of my knives and it doesn't rust! Thanx for replys! How does laminated Moras perform?I have found one somewhere really cheap, new old stock, plain wooden handle etc.

Laminated Mora has Triple the wear resistance, longer to sharpen, prone to chipping

It's an O1 core at 61 hrc , its clad in mild carbon steel

The laminated blades offer an advantage of bending more before breaking, and maintaining the edge longer for wood working. I prefer the blade over the carbon steel blade. But, the prices I have seen on the Mora laminated knives were close to triple the price on comparable carbon steel knives.
