Tanto from hannibal rising. Thing must have had crazy toughness because it penetrated through the bottom of the bad guy's chin through the top of his skull.
 
Under siege. Tommy lee jones and steven segal.

Not much of a fight, but Harley Davidson ans the Marlboro man. Mickey Rourke in the convenience store at the beginning of the movie.

Ok, the Man from Nowhere scene was really well done, and also quite brutal. Very accurate knife fighting, though, for a movie.
 
A Grande Arte (Exposure in the US) Peter Coyote using a Randall Model 14 to fight the bad guy who is using a Joe Kious subtitle double edge fighter. A knife fight for knife nuts. ;)

Wish that was on DVD. Theres a very low resolution VHS rip of it on youtube for free but the quality is awful.
 
I had to double check to make sure that it hadn't gone away, but it is still on Netflix. It showed up like 6 months ago much to my surprise because I hadn't seen it anywhere since it was on one of the premium cable movies services a number of years back.

Not a fight scene, but still knife related. I think Del Toro has a Buck 110 in this scene.

This is the movie that introduced me to the world of high-end blades.

And introduced me to actor Tchéky Karyo - "I'll take the Kious as a friend."

If you can handle an eye full of Aragon wang, the bath house fight scene from Eastern promises is a great one.

However nothing for a long, long time is going to beat the karambit fight scene at the end of the Raid 2.

Well until it's done with light sabers that is...
