I haven't all this last summer (just had a baby not too long ago), but plan on getting back on for some fall riding - before the snow. I live in Colorado (Denver) and ride the trails above Central City where my wife's aunt lives. The knife I plan on carrying will be one of my SAKs and my RAT1 folder. My bike is pretty dated and I use it mostly for city riding - it is a '99 Gary Fisher Big Sur - front RockShox / hard-tail.
I was quite enthusiastic for several years, had a nice Schwinn Moab III. There are several nice trails here in the immediate St. Louis area, including the very difficult Chubb trail out along route 66.
Alas, just got to be too much of a hassle. Wife would complain..."You'll break your leg". (I always had to go out alone due to odd police schedule)
So now I do all my "mountain biking" at work doing bike patrol. Not much in the way of mountains here at the university....

I have an Oryx hardtail w/LX-XT hardware and Shimano wheels. I got the frame after I cracked my KHS Alite 4000. Decent bike, but the company is no more. The parent company had Rocky Mountain under the umbrella as well and saw no need to have both competing for the same market as I understand it to be. I'm looking at a Cannondale Scalpal for next year. I had back surgery in late May, so I've yet to go off road this season, but hope to be out on some easier stuff this fall. I also just picked up a Trek 2100 road bike as running is still pretty hard on my back and I figured the road would be a good place to get some conditioning back. My current EDC is a small Sebenza, but the other knives I currently own(I think 19) are all Spydies. My most prized Spydie would probably be my Charoite Kiwi by Santa Fe as it was an anniversary gift from my wife, followed by my Bob Terzuola Jr.

I have a Jamis 2001 Eureka with Deore LX. Usually I ride around the trails around here in Monterrey, Mexico where I currently live. Most of the trails are semi arid, mostly secondary roads. I try to go out at least once during the weekend, but sometimes golf gets in the way of my riding partner. With me is a Topeak Alien and that has a knife, although I probably should at least pack a SAK.

I'm on a Quest springtail with Shimano gear shifter. I ride the BMP, River Road, Burke-Gilman, Swan Creek, etc. trails. I carry purified water with a silver ring or coin to keep down the bacteria count. I also carry a pump, patch kit, first aid, dog repellant, mirror, and etc. I use a rack with bags. A LED HEADlight and taillight that has many different strobe-like settings. My EDC is a SOG Flash II, drop-point, plain edge folder.
