Brendan-- Here's the technique
As for sandpaper, I use wet/dry sandpaper (the black stuff)-- I usually start with 400-600 grit if the blade is only moderately dull. If you need to do some serious reshaping, try 220 or lower. Once you're satisfied with the edge at 600 grit, you can usually skip up to 1500 or 2000 to polish the edge, though you might want to use some 800 or 1000 grit in between.
