Hi all,

I have been looking to get my first custom "user" knife and I ran accross The Murray Carter Matagi Hunting knife as well as the Muteki camp knife. I really like the look of these blades and they fit my budget too! :D. I have read the various threads here on the Carter knives, but have not seen a review of either of these knives. Has anyone done a review of these? My main concern is the toughness of the blade for hard use given the high RC numbers I've seen (63-64). I've also read one account in which the user stated the edge "rolled" quite easily(even with the high RC). I have also read that these particular models may not actually be made by Mr. Carter, but are overseen by him. Is this the case? Any additional info is greatly appreciated!

My apologies for cramming in so many questions!

I have much the same questions. I have no doubt that they will hold up very well under any cutting chore, however he makes some very large knives (11"), that are hatchet replacements, out of the same laminates and I would be very interested in what would happen if you hit one off of a knot, or came into contact with a hard inclusion. Where did you hear the comment about edge rolling?

Thanks for the link, I missed that thread the first time around. It definately gives me pause. The high hardness of the center core should allow the formation of a very crisp edge without excessive "flopping", and of course resistance to rolling should be high.

If you have to resort to 20+ degree edges and frequent steeling to keep the blade sharp, you are no better off than with Henckels, which certainly should not be the case given the construction. The higher hardness should promote crisp edges, and allow function at lower angles.

I can't speak directly to this issue because all of my Carters are his hand-forged kitchen knives. Although the outside laminations vary in type of steel, all of mine are Hitachi White Steel for the center (edge) layer. I have used the knives a lot and have worked them very hard. I have never had a single edge rolling problem. Mine are breathtakingly sharp and retain their edges through quite a bit of serious use.

Murray used a hand forged laminated blade of high hardness for his ABS Master test and his tester credited it with the best performance he had seen on the test. Although the laminated steel used in Murray's Muteki line is not hand forged, I believe that Murray does all the blade shaping and grinding on them. I would be surprised if they do not perform very well.

Thanks so much for the replies! I'm still strongly considering getting one of these...they're certainly not excessive in price. If I do, I'll certainly post a review :)

Thanks again!
