Well, I've heard such good things about Mr. Carter that a present for my wife was purchased. Don't know exactly why I bought it because I surely know nothing about kitchen knives. Purchased a hand forged Wabocho and laser cut carving knife. Care to tell this old country boy what the intended use of Wabocho might be?

I have one of those and it makes easy the tasks in the ol' kitchen.Nice stuff.

It's a great all around kitchen knife.


get a waterstone and learn how to use it....
 
It should be a dandy. I thought you might enjoy the fact that its name means "oriental knife" in Japanese. I've read nothing but praise for Carter's products.
 
that certainly looks like a knife that should be on my map. Not that I don't have more kitchen knives that I can possibley use, but one more will be good.... I'll be on the lookout.
 
You are in for a suprise! Both the custom and factory Carter knives are SHARP AS HELL! Do yourself a favor and buy his water stone as well. His knives aren't always the most beautiful but they are beautiful and functional. Like I said, they are some of the sharpest knives out there and your wife will cut thru anything like a hot knife thru butter.
