Most of my kitchen cutting is done with a smaller knife, although I have an assortment. I wouldn't concern myself with the finish. Keep it sharp. Use it.

Okay, what you do is get a 400 or 600 grit cork belt and hold a piece of scrap mild steel against it for about 10 minutes to break it in. I believe I knew that already.... you didn't say you made this knife, so I assumed it was a factory knife. I still assume it's a factory knife until you say it's not.Chef knife
