In my experience, S30V appears to hold an edge better than VG10. I've been using my Military heavily since I received it, and like the toughness of S30V. I've slipped and jammed the very tip into stone, as well as cleaned a number of fish without really losing cutting power. A lot of cardboard has been cut, too. The tip was perfect except for a tiny burr I removed. The edge got slightly duller, but still seemed to cut fish, line and cardboard smoothly without any hassle. When I finally sharpened it up, it seemed to be much easier than everything I'd read.
I don't seem to have the best of luck with VG10. It keeps developing minor rust patches. I take my S30V into water often and still haven't had any rust or discoloration. I don't know why, just an observation.
