My First Sujihiki

I have had a few people approach me about making Kitchen Cutlery. I don't have a lot of experience using purpose built kitchen blades. I had even less knowledge about the proper terms and features.

After a bunch of research and help from those in the know. I decided to make a test Sujihiki for my personal use.

Specs:
Steel: 1/8" Aldo 1095
OAL: 390mm
Blade: 240mm
Handle: Stabilized Spalted Sycamore

I have a 270mm in the works for a customer in W2... Comments and Constructive input welcomed and appreciated!
 
Really nice looking blade Ryan. I know less than you about kitchen cutlery, I'm sure of that. But a great looking blade none the less.

That handle looks really nicely shaped and quite comfortable.

I might have "timed" or "clocked" the mosaic pins so that the pattern in both was oriented the same direction. :)


But a minor detail and shouldn't take away from a great knife.

hahaha... Thanks John, Now you know how I have been with the MM to Inch conversion on Google!

Them Kitchen knife folk are a particular bunch, I came in from the shop and realized I had used two mosaic pins, ran out and DOH they weren't going to budge! thanks for posting! I need to catch up with you one of these days!

Nice Ryan, that has really nice lines! I can't ever seem to find the time to make kitchen knives, although really am fond of custom ones.
Maybe we can an action shot of this bad boy!!

The knife is with a local Chef putting it through the paces. I imagine I will be getting it back and can possibly show my Huge lack of Cooking skills!
 
Thin is in!!!!Nice work, sir. I did a 280mm W2 suji with a Stefan Keller wa handle for my first kitchen knife experiment. Nothing like a little pressure the first time out as I am sure that you discovered.;)
 
That Ryan is a very good lookin thing! Love the lines of it and to me anyway, the butt of the handle resembles a parrots head. Fantastic!
