Knife # 22 und #23
Hello knife makers,
I recently finished two more knifes, two kitchen helpers. Very different blade style knives. A western style Santoku knife and a normal all purpose kitchen knife, maybe you could call it a paring knife
Here are some data
Steel: 1.4153.03 (C = 0,8% , CR = 12,7 % , Mo = 1,1 %, V = 0,9 %, Nb = 0,7) aka SB1 hardened to 60 HRC
Handle: Stabilized Zebrawood, blue fiber und brass rivets.
Blade thickness: 2 mm (0.0787) ground to zero at the edge and sharp as hell
Santoku:
Overall length: 310mm (~12 )
Blade length: 190 mm (~7.5)
Weight: 186 g (6.5 oz)
All-purpose knife:
Overall lengt: 255mm (~8.8)
Blade length: 140 mm (~5.5)
Weight: 118 g (4.2 oz)
The Santoku is for a friend from my sons hockey team. The smaller knife will find a home with a colleague.
I started a third one with this pair. But my job and water damage at my house just prevent me from finishing it. I will show it once done
