So to speak.

Thanks to you guys for guiding me when I asked some months back. Through your advice, I found the Yaxell Mon series knives. Not expensive, good steel, thin, and look cool (I’m sorry but that was a small requirement lol). Got them all in. I also picked up (wife gave me) a hand forged w2 custom. It serves needs as it is a little heavier, little softer, useful when I might need something a little less hard. The GEC is a favorite. I keep it not quite so sharp for dicing potatoes when the thumb is the knife stop. The yaxell would leave me with less thumb.... lol.

Here they are. I copied the most used from my peicemeal kit i had. Except I added the large santuko. Thanks for y’all’s guidance, guys! Now to get some stones. Don’t think my Arkansas black gonna cut it.... hah

That is a nice set of kitchen knives. I like the handle and bolsters on those Yaxells. Looks like they'd work well with a pinch grip. Also the overall flatter blade profiles. That custom at the top is ideal - looks like the back half of of the blade is pure flat! I like my chef's knives to have 1/3 to 1/2 of the blade pure flat for chopping, with some belly towards the tip for the occasional rocking.

You can do some good prep work with that set you have there.

thanks man! The handle is one thing that turned me on to these. The slightly western style, as I find the octogon more Japanese style to have some hot spots in pinch grip, or a kinda hybrid grip I use naturally (not quite pinch but not fully handle either). Yes, the custom def makes a good chopper!
They’ll do better prep work than I am capable of, for sure!
