My new custom gyuto from Japan

Just felt like sharing as this baby just arrived from Sakai: 240mm blade length wa-gyuto, ebony handle with marble buffalo horn ferrule, ginsanko core with stainless cladding, highly asymmetrical grind. The blade was forged by Suogo Yamatsuka.

Thanks! I am definitely a fan of the marbled horn, for sure. I had originally requested blonde, and the handle maker came across the rare marbled horn a few weeks later, so I got that for free.

Yes indeed, even though the spine has some width to it. I'll post a choil shot this evening - it's microscopic behind the edge.

Whelp, I was going to take some action shots but I got too absorbed with cooking and neglected to document the occasion! Luckily, I took a couple pictures before cooking, and I had just re-finished the blade with a sandpaper progression, slurry from my Aoto, and a diamond loaded strop from Marko Tsourkan:

It annihilated everything, but as expected didn't want to bisect large potatoes due to the wide spine - that's a task best left to a laser
