I spent some time this evening with some kitchen knives. Earlier this year I re-profiled some of them with my Edge Pro Apex. All they had ever seen was a steel hone before I believe.
They were in need of re-sharpening and I just picked up a paper wheel kit for my bench grinder the other day so I decided to touch them up on the slotted wheel. It worked great!
So I picked up another kitchen knife that was in the same shape as the other two before - it needed help bad. The biggest drawback to the paper wheels is there is no gauge for the angle. This is where the Edge Pro excels - it will adjust to what ever angle you want. I matched the same angle I used before, the green dot (I forget what the dots mean, I'll have to look it up again), and spent some time working up the edge. I started at 120 then went to 220 and 320. After that I moved to the paper wheel to finish it off. Perfect!
If I have to work on an edge more than a "touch up" this is how I'll do it - Edge Pro Apex to set the angle and work up the edge and paper wheel to finish.
I still need to get a leather strop. I have some different grades of polishing compound I can use - white "fine" compound, the white rouge from the paper wheel kit, and I have a black compound that is for rougher polishing. It will be interesting to experiment with them to see what the different results are.
