My new favorite sharpening method

I spent some time this evening with some kitchen knives. Earlier this year I re-profiled some of them with my Edge Pro Apex. All they had ever seen was a steel hone before I believe.

They were in need of re-sharpening and I just picked up a paper wheel kit for my bench grinder the other day so I decided to touch them up on the slotted wheel. It worked great!

So I picked up another kitchen knife that was in the same shape as the other two before - it needed help bad. The biggest drawback to the paper wheels is there is no gauge for the angle. This is where the Edge Pro excels - it will adjust to what ever angle you want. I matched the same angle I used before, the green dot (I forget what the dots mean, I'll have to look it up again), and spent some time working up the edge. I started at 120 then went to 220 and 320. After that I moved to the paper wheel to finish it off. Perfect!

If I have to work on an edge more than a "touch up" this is how I'll do it - Edge Pro Apex to set the angle and work up the edge and paper wheel to finish.

I still need to get a leather strop. I have some different grades of polishing compound I can use - white "fine" compound, the white rouge from the paper wheel kit, and I have a black compound that is for rougher polishing. It will be interesting to experiment with them to see what the different results are.

The slotted wheel with the provided white compound will remove the burr and polish the edge to near mirror. A strop would just be for showing off ;-)
 
Ah, but one can't throw a bench grinder and paper wheel in a backpack or otherwise travel around with it :) It sure is a quick method, though. A strop on the other hand is portable.

After dinner I noticed a bit of a bur (or should I say, roll?) in my knife so I made a pass on each side on the paper wheel and its back to razor sharp.
