Friend of mine and I butchered a lamb yesterday. I used my Izula and rc5. For anyone who thinks this knife might be akward, because of its size, let me tell you, it worked great for cutting and wrapping the meat. It held its sharpness all the way through. It worked great to bone out the shoulder blades, even the finer jobs of making thin cut meat for carne asada, the size was not a hinderance. The more I use this knife the more I fall in love with it, to anyone looking to buy it, but has heard its big/akward, the way it is balanced and handles you dont even know it, so I say, buy it and you wont be dissapointed.

Nice to hear. With a knife this size, some think it's too large for many tasks. With practice, and the correct grip, technique, etc.. you can do lots with the 5. It's also a good idea to have a small knife with you as well, like you have mentioned.

I was afraid of my 5 until I saw Units with the polished convex edge and then did this to the handle.

Now I use it all the time for stuff I never would have dreamed of.

the one knife i love the most is my ESEE-4...but my favorite combination is my izula and my ESEE-5! Thanks for sharing the experience...pictures would be awesome!!!

Does it pass the onion test?

I've noticed that knives all perform relatively the same on most materials. The area where thick knives get into trouble is when going through material. For that, cutting up an onion is the best test. The 5 could probably do it okay but if you were to put it up against a 1/16 to 3/32 inch thick knife, the thicker knife will get blown away.

+1 on the good to know... Just ordered an Esee 5 in black, the skull emblem got me hooked... Also ordered an Izula also in black (I bought one in pink for my wife and got jealous....).

no pictures sorry, can give you a picture of it all wrapped up though. We were in a hurry, and i didnt have a camera. Next one I butcher though, I will post pics of it. Will try cutting up an onion of it.

this was the review I needed to see. That was my one worry about getting the 5. thanks!!

I use my 5 almost daily to split kindling for my stove, I love this knife. Thanks to ESEE, I have now learned that knives can be beaten on, banged against stuff and used hard, and not worried about. Personally, in ww2 if they would have had a rc5, they wouldnt of needed sherman tanks, they could have just destroyed panzers with their 5s.
